Fathers day brunch.


Okay, so Fathers Day is just as good an excuse as any for a cafe style brunch. My favourite kind of brunch is the at home kind, especially when it involves a sleep in followed by a leisurely time spent preparing it. Since Fathers Day is coming up on the 7th of September I thought I would offer some suggestions if you do feel inclined to skip the queues and parking hassles and spoil Dad at home.

And what’s a brunch if not just a big fancy breakfast served slightly later and with a few tasty extras? And with that in mind here are some of my favourite brunch ideas:

  • Eggs cooked any which way you like. Poached, boiled, fried, scrambled, or baked are all good.
  • Crispy bacon, pancetta, or some freshly sliced cold meats such as Spanish jamon, truffle salami, or even some grilled chorizo.
  • Some form of cheese, be it pan fried haloumi, a mixed tasting plate, or my delicious baked ricotta {recipe below}.
  • Good toasted sourdough, preferably topped with smoked salmon or trout, tomatoes and basil, or mixed mushrooms {recipe below}.
  • After that I like to add the wildcard element, be it some zucchini fritters, sliced avocado, tuna dip, or even just some really good quality canned sardines or anchovies drizzled with olive oil.
  • On the lighter side you can also include some fresh fruit, yoghurt, or even some pancakes.

For the baked ricotta start by heating the oven to 200 C and lightly oiling a couple of ramekins. Take about 300 g of fresh ricotta, and in a large bowl place the ricotta, some grated Parmesan, chopped parsley, one clove of grated or minced garlic, a pinch of salt and pepper, and stir well. {You could also add chilli}. Divide it among the ramekins and smooth the top. Cook for about thirty minutes then run a butter knife around the edges to loosen it and tip onto a plate. You could also give it a drizzle with extra virgin olive oil.

For some smoked trout toasts take some rye bread or seeded rolls and toast on both sides. Spread some sour cream on one side, add some sliced avocado, and top with slices of smoked trout {or salmon}. Sprinkle some chopped chives on top, give it a twist of cracked black pepper, and a tiny drizzle of extra virgin olive oil.

For some delicious mushroom bruschetta start with a variety of mushrooms {portobello, swiss brown, oyster, shiitake, button, etc}. Heat a fry pan to a high heat and add a little olive oil and butter. Gently fry some sliced garlic for a few seconds before adding the sliced and chopped mushrooms and a sprig of fresh thyme. Fry them until all the liquid has evaporated and they start to caramelise. Add another knob of butter and some freshly chopped parsley and serve with toasted sourdough bread.

    1. The banana bread is good, I make it most weeks. Took some along to my son’s kindy class and did a demo about healthy food. So I’m now THAT mum who made them yummy banana bread, lol. And go make the ricotta now, its super easy and quick. Add a few olives and some bread and it’s a meal.

        I’ll pick up ricotta at the store, I only have goat cheese & some flavored cheese curd which is also tasty! I’ll try to take a picture when I make it sometimes I forget stupidly.

      3. Well take out pizza is always a pleaser!=) Got any homemade pizza recipes? Pizza is one thing I can actually handle making so long as I buy the dough, but duh I guess anybody can make that kind of “homemade” pizza. I’m gonna make my own ricotta I decided, it’s much simpler to do than I thought possible. And I’m making a soup from scratch right now, first time ever I think.

      4. Mmmm, soup sounds good right now. I like to use flat breads for pizza bases, that way everyone gets to choose their own topping. I used to make pizza bases from scratch but it’s just worth the bother without a wood fired oven.

      5. I often do flatbread too if not a frozen dough and sometimes the dough mix-just add water stuff(you’re probably wince at that). I’m making an apple butternut squash soup with cinnamon, onion and goat cheese when it’s finished, hope it’s edible.
